Swedish Pancake Recipe

By popular demand, courtesy of Craig (Adam's Dad).

1) Two large eggs, blended until light

2) Add: 1 1/4 cups of milk, 3/4 cup of flour, 1 tablespoon of sugar, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt. Blend well and pour into Swedish Plettar pan (silver dollar sized pancakes or small crepe pan).

3) Use butter for frying. fry until very lightly browned on each side, not overdone.

4) Serve with lingonberries, or maple syrup, butter, etc...
